Mango Salsa
I love salsa. Generally I make savory salsa, not too spice, but lots of flavor. That’s what I grew up with and it’s still what I love. Today I wanted something different, so after a quick Pinterest perusal session, I decided to try a mango salsa.
So here’s my recipe:
- 2 medium-large ripe Mangoes; peeled, pitted, diced
- 1 ripe avocado, diced
- 1 small can of corn
- 1/4 cup red onion; minced
- 2 Tablespoons fresh cilantro; diced
- 2 Tablespoons lime juice
- salt and pepper to taste
Instructions:
Combine all ingredients in a bowl, let rest in the refrigerator for 30 minutes before eating (I like to let the flavors meld.)
While I like the flavors, I think this would be great with some kind of protein. A white fish, pork, or chicken. Not so good all on it’s own. (Doesn’t that look bland? It kinda is.)
What I’ll do different next time:
Jalapenos – not a lot, maybe just one, de-seeded and diced.
Red Bell Pepper – for flavor and color.
