Last weekend, I bought matcha Oreos, and since then I’ve been dying to do some baking with matcha. Matcha is finely ground powder of specially grown and processed green tea. You can drink it with hot water, but you can also cook with it. You can buy it online at amazon.ca, (Kiss Me Organics – Culinary Grade Matcha Green Tea Powder is a popular one), though I found it at Umami Shop in downtown Lethbridge.
This recipe marked the first time I got to use my new Kitchenaid Scraper (also from amazon.ca). If you have a Kitchenaid, and don’t have one of these beaters, you must get one!
As a side note, baking is not my thing, but even I am successful with these cookies. Just take your time.
Basically, this is a simple shortbread cookie, with the addition of matcha powder, If you find your dough is too crumbly, add a bit more room temperature butter.
With this recipe, be sure eggs and butter are room temperature.

Ingredients
- 1 1/2 cups all purpose flour
- 3/4 cup cake flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp matcha powder
- 3/4 cup unsalted butter room temperature
- 1 cup sugar
- 2 each egg yolks room temperature

Instructions
- Preheat oven to 350.
- Whisk together flours, baking powder, salt and matcha powder, set aside.
- In a mixer, beat butter and sugar until light and fluffy (scraping sides as necessary).
- Add yolks, one at a time, until well mixed (again, scraping sides as necessary).
- Add flour mixture, half at a time, and mix until a ball forms. (Do I even need to say scraping sides as necessary?)
- Divide in half, form into balls and refrigerate until firm (about 30 minutes).
- Turn dough onto a lightly floured surface, and roll out to 1/3 inch thickness.
- Cut dough into circles using floured 2 inch cutter. I used a drinking glass. Place onto cookie sheet, about 1 inch apart.
- Bake for 15-17 minutes, until edges are beginning to brown. If your cookies are browning too quickly, let oven cool down to 300 and bake for about 20 minutes.
- Want to dress up your cookies? Melt some white chocolate chips and drizzle on top of your cookies
