Matcha Shortbread Cookies
Basically, this is a simple shortbread cookie, with the addition of matcha powder, If you find your dough is too crumbly, add a bit more room temperature butter. With this recipe, be sure eggs and butter are room temperature.

  1. Preheat oven to 350.
  2. Whisk together flours, baking powder, salt and matcha powder, set aside.
  3. In a mixer, beat butter and sugar until light and fluffy (scraping sides as necessary).
  4. Add yolks, one at a time, until well mixed (again, scraping sides as necessary).
  5. Add flour mixture, half at a time, and mix until a ball forms. (Do I even need to say scraping sides as necessary?)
  6. Divide in half, form into balls and refrigerate until firm (about 30 minutes).
  7. Turn dough onto a lightly floured surface, and roll out to 1/3 inch thickness.
  8. Cut dough into circles using floured 2 inch cutter. I used a drinking glass. Place onto cookie sheet, about 1 inch apart.
  9. Bake for 15-17 minutes, until edges are beginning to brown. If your cookies are browning too quickly, let oven cool down to 300 and bake for about 20 minutes.
